Sweet Potato Rice 芋ごはん

Japanese people often enjoy this Sweet Potato Rice in autumn.  This is super easy to cook because it is only adding sliced potatoes and a little bit of salt to the normal rice before heating it.  If you have a rice cooker, just add potatoes and salt.  If you don't, try this procedure.

Ingredients (serves 4)

2 cups rice

2 cups water

2 sweet potatoes

1 tsp salt

1 Tbsp Sake (if available)

Procedure

1. Rinse rice in water several times until the water becomes clear.

2. Soak the rice in water for at least 10 min.

3. Slice sweet potatoes into bite-size and soak them in water for a while.  Drain them.

4. Add salt and sake in the water with rice, place sweet potatoes over the rice.

5. Put the pan over middle heat until it comes to boil and then simmer it for 10 minutes over low heat.

6.  Turn off the gas, but keep the lid on the pan for 10 minutes so the rice is well-steamed.

7.  Stir the rice and sweet potato,  and then serve it.
